Saturated fatty acids considered harmful. They are mainly of animal origin (meat and derived products, dairy products). On the other hand unsaturated fatty acids divided into 2 main categories:
Monounsaturated fatty acids
Polyunsaturated fatty acids
The leader in monounsaturated fatty acids is oleic acid or omega-9 (Ω9), which is found among other things in olive oil. As for polyunsaturated fatty acids, they include omega-6 fatty acids (Ω6) and omega-3 fatty acids (Ω3). Omega-6s are called linoleic acid and are found in most vegetable oils.
There are 3 fatty acids in the omega-3 family:
α – linolenic acid present in small proportions in certain vegetable oils (camelina, flax, hemp, etc.),
eicosapentanoic acid (EPA),
docosahexanoic acid (DHA).
In the body, α – linolenic acid (one of the Ω3) will only be transformed into EPA and then into DHA if the intakes of omega-6 (linoleic acid) are not too high because these are the same enzymes that are responsible for the conversion of omega-6 to gamma-linolenic acid and omega-3 to DHA.
The optimal balance of fatty acid intake should be 4 Ω6 for 1 Ω3, but in our modern diet, the reverse is the case. The sources of Ω6 are numerous and the inputs of Ω3 are often very weak. The proportions are frequently around 15 to 20 Ω6 for 1 Ω3. Due to the excess of Ω6, the enzymatic competition is fierce and the little Ω3 is very difficult to convert into DHA usable by our organism while it is the most essential of Ω3. Nutrition experts recommend a daily food intake of at least 200 mg of Ω3, which is far from the case.
One of the ways to avoid this trap is to consume docosahexanoic fatty acids (DHA) directly, that is, fatty fish.
Omega-3 EPA and DHA make up 21 to 36% of the total percentage of fatty acids in cell membranes throughout the body, but their proportions vary greatly depending on the type of tissue. In mammals, the tissues that contain the most DHA are the retina (19.5%), the testes (8.7%) and the brain (7.2%). The main fatty acid in the brain is DHA, which accounts for 10 to 20% of all fatty acids. The EPA represents only less than 1% of total fatty acids.
DHA participates both in the structure and the functioning of the cell membranes of the brain but also of the neurons.
It integrates with the nervous system from the third trimester of fetal life and then during the first years of life. To build the brain and the ocular system of the very young child the contributions are carried out via breast milk because the fetus is unable to synthesize it by itself.
In adulthood, the brain is made up of 60% fatty acids, 14% of which are omega-3, of which 97% are DHA.
DHA is fundamental to the flexibility of neuron membranes and their proper functioning so that nerve impulses easily circulate through brain circuits.
DHA also provides good intakes of glucose, the main fuel for this organ.
Several studies show that regular consumption of DHA slows brain aging and reduces the risk of the appearance of wear and various degenerations.
The retina is a tissue rich in DHA, it contains about 20%.
This fatty acid translates light signals into nervous messages. It also promotes the sensitivity and adaptability of the eye to light.
Present in photoreceptors, it is the only fatty acid capable of ensuring their survival and slowing down their disappearance.
It is therefore useful for preventing and reducing the risk of retinal wear.
From this point of view, the properties of omega-3 fatty acids are well documented. We know that they:

DHA is necessary for the development of the fetal brain, its intelligence and its visual acuity.
During pregnancy, from maternal food reserves and intakes, the fetus receives daily up to 2.2 g of essential fatty acids (omega-3 and omega-6). This only if the mother's food intake is sufficient.
Supplementing the mother with DHA contributes to a better IQ of the unborn child. Other benefits have also been reported, such as a reduction in allergies.
The last 3 months of pregnancy constitute a critical period which requires special attention because the fetal needs for DHA are large and constant. They are estimated at 50 to 60 mg per day. At this point, the fetus is unable to synthesize enough to cover its own needs. The main source of DHA is from the mother and is passed through the placenta.
Several studies demonstrate the benefits of high doses of DHA in pregnant women in the fight against preterm delivery. Each year in France, another 65,000 premature babies are born.
